a family recipe

Since i was a little girl my family has made this "cake" it is called the one, two, three, four, five cake..based on the ingredients.(british courtship cake)
most of the time the topping would be apricot preserve my favorite, or apples. My grandmother would make this often, it was simple and quick. this is the kind of cake that you cat cut up into pieces and take on a road trip, in fact my aunt always sent us home from montreal with a container full. It is wonderful to me to see my niece and nephews embrace this cake as i did when i was young.

I had some plums that had gone to soft to just eat so i decided to make the cake/tart,I cooked the plums with some vanilla till it made a compote.

1 teaspoon of vanilla
2 eggs
3 tablespoons of butter
4 espresso cups of sugar
5 espresso cups of flour
1 teaspoon of baking powder

cream the butter and sugar together, then add eggs and vanilla. mix in flour a little at a time, till the dough becomes a ball. i used a 9 inch tart pan, but it really depends on how thick you want to make the cake.

in a sauce pan i combined the plums and a tablespoon of vanilla and cooked over slow heat, then gently mashed it. let cool. then put plums over tart and put it in the oven at 350..for about 45 minutes or till done.

* you can used any fruit preserves apricot is really good or fresh apples...
